My Love Affair

I must admit that I’m a PB and banana fan more than PB & J! That’s why this design from a Woot Watch shirt cracked me up! Inappropriate, but hilarious! :) Peanut_Butter_and_Jealousyav0Detail So, when I found a recipe for PB and banana muffins, I couldn’t wait to try them! Q and I made them on Sunday afternoon after church! And, trust me, they are good!
October 1-3 049Peanut Butter & Banana Muffins

1/2 cup butter, softened
1 cup white sugar
2 eggs
1/2 cup peanut butter
2-3 mashed ripe bananas
2 cups all purpose flour
1 teaspoon baking soda

Preheat oven to 325 degrees. Cream together softened butter and sugar in bowl. Add eggs, beat well. Stir in peanut butter, bananas, flour, baking soda until blended. Pour into muffin tins. Bake for 20-30 minutes or until done.

You can also make a loaf. Bake for about an hour.

A twist on Banana Bread

When the bananas were starting to turn this time around, I went to cooks.com and found an easy banana bread recipe that did not disappoint. I thought it was fun that it was for bars...and even though I didn't have a jelly roll pan, I followed those instructions. It wasn't super sweet, but made a great, quick breakfast for a few days.


EASY BANANA BARS

3 lg. over ripe bananas (or 4 small)
3/4 c. sugar
2 eggs
1/2 c. nuts
2 c. flour
1/2 teaspoon salt, optional
1 teaspoon baking soda
Mix all ingredients. Put in 5 x 9 inch loaf pan that has been greased with shortening.
Bake at 325°F degrees for 1 hour OR

BANANA BARS: Pour mixture into jelly roll pan, bake until toothpick comes out clean (sides will pull away from pan). Make a sugar (confectioners') and water mixture and drizzle over the top when cooled. Cut into squares.

Is it BAD that I fed this to my TWO year old?

I guess if you ate enough, you COULD get a little drunk? Doesn't the alcohol cook out of things? Who knows? Who cares!!! It's quite possibly the best bread I've ever had! And, seriously easy! Thanks, Rachel, for sharing!!!
Beer Bread
3 C self rising flour
3 T sugar (or more if you like your bread sweet)
1 bottle of beer (I used Michelob Ultra)
1/2 stick of butter

Mix all ingredients together. Pour in greased 8x8 pan. Bake at 350 degrees for 30 minutes. Melt 1/2 stick of butter and pour over the top. Bake for an additional 10 minutes. EAT and ENJOY! I promise, you will!

Great for Little Kitchen Helpers...

I got this super easy recipe from Meredith's recipe blog and I loved that I didn't even have to get out my mixer! And, I loved how involved Quinn got to be in the process. I think that the time and effort it took to make it, and then watching it cook, made the finished product even yummier! :)

Banana Bread

3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

No need for a mixer for this recipe. Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool. Remove from pan and slice to serve.

"Stromberry" Bread

When my little guy got up at 6:30 this morning (yuck!), I took the opportunity to do a little baking. Yesterday, I saw this yummy Strawberry Bread recipe on Annalee's blog and actually had ALL of the ingredients to make it...including a good amount of strawberries that were going to go bad if I didn't use them right away! ...And, it was super easy...and a perfect breakfast. ... Q loved the "stromberry" bread too!
Strawberry Bread
1 1/2 C flour
1/2 t baking soda
1/2 t salt
1/2 t cinnamon
1 C sugar
2 beaten eggs
1 T vanilla (I chose to add this!)
1/2 C oil
1 C chopped strawberries (frozen or fresh, or frozen thaw first)
3/4 C chopped pecans (optional)

Preheat oven to 350 degrees. Combine dry ingredients. Add remaining ingredients. Stir until well moistened. Pour in greased loaf pan. Bake for 1 hour or until done throughout.

Friendship Bread

Last week, my friend Jodi gave me a starter for Friendship Bread! I had never done it before and was so excited! So, when we got to Day 10, Q and I got busy! ... After making a really big mess in the kitchen, we gave three bags away (one to Matt's mom, one to Matt's sister, and one to Shannon) and kept one bag so that we can make more...because it is SOOOO yummy! ...So, if you'd like one, let me know, and we'll pass it on to you! :)

Friendship Bread

NOTE: DO NOT use any type of metal spoon or bowl!
DO NOT refrigerate!
If air gets in the bag, let it out.
It is normal for the batter to rise, bubble and ferment.

Day 1: Do nothing. (Make sure your bag is dated)
Day 2: Mush the bag.
Day 3: Mush the bag.
Day 4: Mush the bag.
Day 5: Mush the bag.
Day 6: Add 1 cup of flour, 1 cup of sugar and 1 cup of milk to the bag. Mush the bag.
Day 7: Mush the bag.
Day 8: Mush the bag.
Day 9: Mush the bag.
Day 10: Follow the instructions below.

Pour the entire contents of bag into a non metal bowl and add:
1 ½ cup flour
1 ½ cup sugar
1 ½ cup milk
Then, put one cup of the batter in four separate gallon baggies. (So, 4 cups total)

Now, for the rest…
Preheat oven to 325.
To remaining batter add:

3 eggs
½ cup milk
2 tsp. cinnamon
1 ½ tsp baking powder
1 ½ tsp salt
2 cups flour
1 cup oil (or ½ cup oil, ½ cup applesauce)
1 cup sugar
½ tsp vanilla
½ tsp baking soda
1 large box of instant vanilla pudding


Grease loaf pans (I used two 8 x 3 ¾ x 2 ½ sized metal pans). Mix additional ½ cup sugar with 1 ½ tsp cinnamon. Dust the greased pans with half of the mixture. Pour batter evenly in pans and sprinkle with the remaining mixture over the top. Bake for 1 hour. Serve warm or cold.

Should the bag not be passed on to a friend on the 10th day, be sure to tell the recipient which day the bag is on when it is presented. The date lines can be used to keep track of the day you are on. … If you are keeping a bag for yourself, you will be baking every 10 days! Enjoy!

Only the Amish know how to create the “starter.” So, if you give all of your bags away, you will have to wait until someone gives you a “starter!”
