Tired of Eating Out

We have eaten out WAY too much lately. So, this week, I decided it was time to get back in the grove. And, this easy sandwich was a great way to ease me back into things. It was super fast and super yum! It WILL be made again!

Dripping Roast Beef Sandwiches

1 (10.5 ounce) can French Onion Soup
1 tablespoon Worcestershire sauce
3/4 pound thinly sliced deli roast beef
4 Hoagie Rolls with Sesame Seeds
4 slices diced provolone cheese, cut in half
1/4 cup drained hot or mild pickled banana pepper rings

Directions
  1. Heat the oven to 400 degrees F.
  2. Heat the soup and Worcestershire in a 2-quart saucepan over medium-high heat to a boil. Add the beef and heat through, stirring occasionally.
  3. Divide the beef evenly among the rolls. Top the beef with the cheese slices and place the sandwiches onto a baking sheet.
  4. Bake for 3 minutes or until the sandwiches are toasted and the cheese is melted. Spoon the soup mixture onto the sandwiches. Top each sandwich with 1 tablespoon pepper rings.

Homemade?

This is my own chicken salad recipe...but, I totally cheat. It's not completely homemade. I use canned chicken and think it is SO yummy! Also, I am not a fan of mayo, so I use other things! It's one of Matt's favorites. Here's what to do...

Easy Chicken Salad

1 can of white chicken breast
Dill pickle relish
Sweet pickle relish
Chopped celery
Finely chopped pecans
Sliced grapes
aprox. 1/4 cup Ranch dressing
aprox. 1 T. Spicy mustard
Salt
Pepper

Drain chicken and shred. Place in bowl and add celery, relishes, grapes and pecans. Add dressing and mustard. (don't add too much, you don't want it to be runny!) Season with salt and pepper. Stir well. Serve on a sandwich, on crackers or with pretzel chips.

Our $413.74 Sandwich

When we were waiting in the waiting room for Matt's MRI, the Food Network was playing for the whole 2+ hours that were were there. We watched all kinds of chefs prepare their masterpieces. I was amazed at how entertaining it really was. ... But, the thing that looked the yummiest was this sandwich. Matt and I both decided that we had to try it. It seemed so different and good. ...So, last night, we made them, and MMMM MMMM! It IS so good! It may not be worth the $413.74 we spent to see the show, but it'll be one we make again, for sure!
Apple Bacon Grilled Cheese Sandwich
Ingredients:
bread (of your choice)
12 ounces Cheddar, sliced
3 tablespoons unsalted butter
bacon (cooked to desired crispiness)
1 green apple, thinly sliced

Directions:
Heat large skillet over medium-low heat.
Assemble sandwich: Top bread with slices of Cheddar, 3 pieces of bacon, apple slices and additional Cheddar. Place the remaining bread on top and spread with butter. Place on skillet buttered-side down and butter the remaining side. Cook until cheese is slightly melted and bread is browned. Flip the sandwich and continue to cook until cheese is thoroughly melted and sandwich is golden brown.
